Roasted Asparagus with Basil

Roasting is one of the flavourful and easiest ways to cook asparagus - and the asparagus is guaranteed to be tender, sweet and nutty tasting.

1 lb

regular asparagus, ends trimmed

nonstick cooking spray

 

1/4 tsp

kosher salt

1.5ml

fresh basil leaves, torn

Directions:

  1. Place a rack in the middle of the oven and preheat the oven to 500°. Line a heavy jelly-roll pan or baking sheet with parchment paper.
  2. Place the asparagus in the jelly-roll pan in a single layer, Lightly spray with non-stick cooking spray, then shake the pan to evenly coat the asparagus. Roast for 5 minutes. Shake the pan again and roast the asparagus until tender and browned in spots, 4 to 5 minutes longer.
  3. To serve, with tongs, transfer the asparagus to a platter and sprinkle with the salt and basil.
